Guest guest Posted April 25, 2006 Report Share Posted April 25, 2006 Asparagus Linguine 6 oz. uncooked linguine 1 small onion, chopped 2 garlic cloves, minced 1 TB extra virgn olive oil OR canola oil 2 tsp. butter 1/2 lb. fresh asparagus, trimmed and cut into 1/2 " pieces 2 TB white wine or vegetable broth 2 TB grated Parmesan cheese 1 TB lemon juice 1/4 tsp. salt 1/8 tsp. ground black pepper Cook linguine according to package directions; drain and set aside; keep warm. In a nonstick skillet, sauté the onion and garlic in oil and butter until tender. Add asparagus; cook and stir for 2 minutes or until crisp-tender. Add wine or broth; cook and stir for 1 to 2 minutes or until liquid is reduced. Remove from the heat. Add linguine to the asparagus mixture. Add remaining ingredients; toss to coat. Serve immediately. Yield: 4 servings. Nutrition Information: One serving (1 cup) = 245 calories, 7 g fat (2 g sat fat), 7 mg cholesterol, 217 mg sodium, 36 g carbs, 3 g fiber, 8 g protein.
