Wow, I haven't joined an email list in a loong time so I'm excited about this one I'm Jessica, and I've been a vegetarian for 9-10 years (don't quite remember when). I also don't usually cook with added fats (oil, butter, cheese, etc) unless I'm throwing a party or making a dessert which is rare. The last food type list I was on was a Fat Free and a Low Fat one, and that was years ago. I'm a veg because meat has always grossed me out. Mom didn't make a lot of it when I was growing up, and I always hated it. Got to the point where the only time I ate it was to " be nice " when I was at someone's house for dinner, and decided it was ridiculous to be eating something I didn't want to for someone else. My pet peeve about being a veg is that when someone finds out that I am one, you get the " I used to be but found I HAD to have meat/gained weight/was tired/etc " or whatever other reason they are no longer veg. To be honest, I don't really like talking about why I'm veg or hear about why other's aren't or used to be... after all, I don't go around asking people why they eat what they do... I actually think it's kind of rude. Anyway... A bit more about myself... I'm 35, divorced 3 years ago, my ex and I are on great terms (he remarried last year), and no kids. I live in the San Francisco Bay Area (close to San Jose actually) and I've been dating my boyfriend Thad for almost 3 years... he lives in L.A. so I'm constantly on planes, we see each other 2-4 weekends a month. Yes, Southwest loves us I've been working in the tech industry at the same company for 13 years, at the moment I'm a project manager in an IT-like group (in our Legal department) managing software development and 3rd party installation projects. My back ground is electrical engineering. Don't especially care for my job, but it allows me to live where I want to and do the things I enjoy, I'm still trying to figure out what I want to do when I " grow-up " . I'm Hispanic and Jewish and I enjoy: cooking, eating, socializing (of which I do a lot), working out (jazzercise, ballet, yoga, weight lifting), ballroom dancing, hiking (I've walked in the 3-day 60 mile breast cancer walk for the past 4 years), scrapbooking, watching movies, gardening, reading... I'm sure I'm forgetting something. Oh, and as you can see I'm long winded and like to " talk " I'll stop now before I bore you all. Let me know if I didn't cover something or you have questions So quick " recipe " (speaking of which, are we supposed to go post these in the " files " ... how does that work?) Dinner last night was stuffed acorn squash... I'll post that later this week when I have time to type it in. So I held onto the acorn squash seeds... and did the following... this could be done with any squash that has large seeds (pumpkin, etc). Washed seeds Sauteed in a non-stick pan with: Lime Juice Chili Powder Salt Pressed garlic (all to taste) Once it got to the point where the seeds were starting to stick to the pan a bit (so liquid gone), I stuck them in the toaster oven and roasted them till brown. YUM!!! All seeds are high-fat (and I don't usually eat them), but given that this is the first time I've done this since I was a kid, I'm not worried about it... plus you don't get that many seeds out of 2 acorn squash, and I figure I'll eat it through-out the week.
