Italian Stuffed Mushrooms

 

1 1/2 cups cooked fresh spinach, chopped

12 extra large mushrooms

1 garlic clove pressed

3/4 cup mayonaise

1/4 cup Parmesan cheese, grated

1/4 cup fine dry bread crumbs

2 Tbls. sherry

2 tsps. lemon juice

1/2 tsp. salt

 

Drain spinach, press out the liquid. Wash mushrooms, remove and chop the

stems,

reserve caps. Mix the mayo with chopped stems and remaining ingredients.

Heap mixture into caps. Arrange on oiled pan and bake at 350 degrees for 15 to

20 minutes.

Enjoy.
