Guest guest Posted April 24, 2006 Report Share Posted April 24, 2006 Italian Stuffed Mushrooms 1 1/2 cups cooked fresh spinach, chopped 12 extra large mushrooms 1 garlic clove pressed 3/4 cup mayonaise 1/4 cup Parmesan cheese, grated 1/4 cup fine dry bread crumbs 2 Tbls. sherry 2 tsps. lemon juice 1/2 tsp. salt Drain spinach, press out the liquid. Wash mushrooms, remove and chop the stems, reserve caps. Mix the mayo with chopped stems and remaining ingredients. Heap mixture into caps.
