Guest guest Posted April 24, 2006 Report Share Posted April 24, 2006 Buckwheat Apple Flapjacks 1 cup buckwheat flour 1 cup unbleached white flour 1 tsp baking powder 1/2 cup egg substitute or 4 egg whites 1 tsp vanilla extract 2 cups water 2 small red apples, peeled, cored and diced walnut oil, for oiling pan Combine the flours and baking powder in a bowl and stir to mix well. Add the eggs, vanilla and water; mix to blend, making sure to get all the lumps out without over mixing. Stir in the apples. Heat a griddle or a large stainless steel pan over medium heat. When the oil is shimmering, ladle 1/2 cup of batter onto the pan and cook 2 to 3 minutes, until the top of the flapjack is bubbly. Flip the flapjack with a spatula and cook on the other side 2 to 3 minutes, until golden. Continue to oil the pan and cook the flapjacks until all the batter is used. 12 flapjacks.
