Guest guest Posted April 23, 2006 Report Share Posted April 23, 2006 Cheese Stuffed Chayotes 4 small chayotes, cut lengthwise in half 2 3/4 cups water 2/3 cup cheddar cheese, grated 1/8 tsp. salt 2 tsps. margarine or butter 1/3 cup plain breadcrumbs or crushed spicy corn chips Wash chayotes and bring to a boil in water. Cover and boil at low to moderate heat for 60 minutes or until tender. Preheat oven to 350 degrees. Drain chayotes, remove seeds and fibrous area around seeds. Scoop out the flesh without braking the shells. Place shells on a cookie sheet. Mash the flesh and mix in the cheddar cheese, salt, and butter. Stuff shells with this mixture.
