Guest guest Posted April 23, 2006 Report Share Posted April 23, 2006 Caramelized Onions Quesadillas 1 large spanish onion, thinly sliced 1 tablespoon extra virgin olive oil 1 teaspoon granulated sugar 2 tablespoons balsamic vinegar salt and freshly ground pepper 2 large flour tortillas 1/2 cup freshly grated Parmesan cheese nonstick vegetable oil spray Preheat oven to 400 degrees. Prepare baking sheet by spraying with nonstick vegetable oil spray. Set aside. Heat the oil in a heavy skillet over medium-high heat. Add onions and sauté until translucent, about 10 minutes. Add sugar, turn heat down to medium and continue to cook, stirring occasionally, for another 15 minutes or until onions are slightly browned. Add balsamic vinegar and stir. Continue cooking until the vinegar evaporates. Season with salt and freshly ground pepper. Spray tortillas with vegetable oil cooking spray and place on prepared baking sheet, sprayed side down. Spread half of the mixture over one half of a tortilla. Sprinkle half the cheese over top. Fold other half over and press firmly to spread filling evenly to edges. Repeat with second tortilla. Bake in oven for 12 to 14 minutes or until tortillas are golden brown. Let cool for several minutes. Cut into wedges. Serve warm. Makes 4 to 6 servings.
