Guest guest Posted April 22, 2006 Report Share Posted April 22, 2006 I'm not a huge fan of curry but this is very good and I top rice with it. If you grill tofu it's good on that too. You can also add a hot pepper to the saute with the onion/leek/apple mixture. Curry Leek Sauce 1/4 pound leeks, finely chopped 1 onion, finely chopped 1 apple, peeled and finely chopped 3 tsps. curry powder 2 tsps. olive oil or vegetable oil 1 cup vegetable broth 1/3 cup soy milk or cream 1/4 cup cottage cheese or crumbled firm tofu 3 Tbls. fresh lemon juice salt and pepper to taste In a sauce pan heat oil and saute leeks, onion and apple until tender. Add stock and heat, cook until sauce reduces slightly. Add cream and simmer for 5 minutes. Add cottage cheese and puree with a hand blender. Finally add the lemon juice and season to taste with salt and pepper. I like to add a 1/2 tsp. of lemon zest to this.
