Guest guest Posted April 21, 2006 Report Share Posted April 21, 2006 Mexican Hominy Vegetable cooking spray 1/2 cup onions, chopped 1 clove garlic, minced 1 can (15-1/2 oz.) yellow hominy, rinsed and drained 1 cup chopped fresh tomato 2 TB canned chopped green chiles 1/2 tsp. chili powder 1/8 tsp. salt 1/4 tsp. ground black pepper 1/4 (1 oz.) cup less fat sharp Cheddar cheese, shredded Coat a nonstick skillet with cooking spray; place over medium high heat until hot. Add onion and garlic; sauté until tender. Stir in hominy and remaining ingredients except cheese. Spoon mixture into a 1 quart baking dish coated with cooking spray.
