From The Art of Tofu by Akasha Richmond (chef to the stars) Tokyo Miso Soup 6 cups water 1 Tbl. vegetable broth powder 1 sm. white onion, sliced into moons 1 leek, sliced into moons 1 carrot, cut into 1/2-inch slices 1 1/2 pieces kombu (about 4-inches, sea vegetable) 1/2 head of green cabbage. very thinly sliced 2 scallions, sliced thin 4 Tbls. red or brown miso (I use the golden and it's fine) 1 pkg. Mori-Nu extra firm tofu cut into cubes Bring 6 cups water to a boil, add broth powder, onion, leeks, carrots and kombu. Simmer for 15 minutes. Add cabbage and cook another 8-10 minutes. In a small bowl mix the miso with some of the hot broth. Turn off the heat and add miso, scallions and tofu. Stir and serve.
