Guest guest Posted April 21, 2006 Report Share Posted April 21, 2006 Alphabet Muffins These are very moist muffins, kids like them, very kid friendly. 2 cups unbleached all-purpose flour 2 tsps. baking powder 1/2 tsp. ground cinnamon 1/2 cup sugar 1 1/2 cups apple juice 1 medium apple, peeled, cored and chopped 2 ripe bananas, mashed 1/2 cup cashews, chopped Preheat the oven to 325 degrees. Lightly oil the muffin pan with non-fat cooking spray. Combine the dry ingredients and mix well. Set aside. In another bowl combine the apple juice, apple, banana and cashews. Add wet ingredients to dry ingredients and stir until just combined. Fill the muffin cups two-thirds full. Bake for 20 to 25 minutes, or until slightly raised and lightly browned. Makes 10 to12 muffins. Calories 200, Fat 3.5g, Cholesterol 0mg, Sodium 80mg, Carbohydrates 39g, Fiber 2g, Sugars 19g, Protein 4g. Points 4.
