I just made an adaptation of it last night, and one loaf is gone... there are only two of us in the house. (Yes, I was *bad* and ate some for breakfast too.) My version - Amy's Alternate PB, Banana, Chocolate Chip Bread 4 very ripe bananas, mashed 2 1/2 c whole wheat pastry flour 1 c soy milk 1/3 c unsweetened applesauce 1 tbsp baking powder 3/4 c peanut butter 1 1/2 tsp vanilla 1/2 tsp ground cinnamon 2 tbsp ground flaxseed 1 cup chocolate chips non dairy Preheat oven to 350 degrees. Stir together flour, baking powder and cinnamon. In another bowl combine bananas, soy milk, peanut butter, flax, vanilla and applesauce. Add to flour, stir until combined. Stir in chocolate chips. Pour into two greased 8 x 4 x 2 loaf pans. Bake 50 to 55 minutes or until toothpick comes out clean. No frosting necessary, and *great* toasted.
