Guest guest Posted April 20, 2006 Report Share Posted April 20, 2006 Spinach-Chestnut-Bean Sprout Bowl 2 tablespoons reduced sodium soy sauce 2 tablespoons fresh lemon juice 1 teaspoon sesame oil 1/4 teaspoon sugar 1/4 teaspoon freshly ground black pepper 8 cups torn cleaned spinach 1 cup sliced mushrooms 1 cup bean sprouts 1 8 oz. can sliced water chestnuts, drained 1 red bell pepper seeded and julienned 4 scallions, thinly sliced 2 tablespoons sesame seeds, toasted In a small jar with a tight fitting lid or a small bowl, combine the soy sauce, lemon juice, oil, sugar and black pepper, cover and shake well or whisk until blended. In a large salad bowl combine the spinach, mushrooms,sprouts, water chestnuts, bell pepper and scallions. Add the dressing, toss to coat. Serve, sprinkled with the sesame seeds. Makes 8 servings.
