We can go to the numerous birch trees and tap them as one would tap a maple tree for sap. We collect the sap and drink it. It is like the best tasting water ever. It was used by the natives for a " spring cleanse " . It is full of life giving nutrients. People can also boil this down to a syrup. It tastes something like corn syrup. It takes about 100 gallons to make one gallon of syrup. It takes about 40 gallons of maple sap to make one gallon of maple syrup. Maple syrup tastes better in my opinion.
