Guest guest Posted April 19, 2006 Report Share Posted April 19, 2006 Louisiana Creole Succotash My kids love this, yes they like lima beans, to strange...lol 1 tbsp. garlic, minced 2 tbsps. shallots, minced 2 tbsps. olive oil 2 cs. corn kernels, fresh or frozen (I used frozen) 1 c. lima beans or fava beans, fresh or frozen, cooked (I used lima, frozen) 1 c. tomatoes, peeled, seeded, chopped 1 onion, yellow, roasted, chopped 1 tbsp. creole seasoning 1 cup beer or nonalcoholic beer (I used the non) 2 tbsps. basil, fresh, chopped 2 tbsps. oregano, fresh, chopped 1 tbsp. thyme, fresh, chopped hot pepper sauce to taste worcestershire sauce, vegetarian, to taste Saute garlic and shallots in oil until transparent, about 2 to 3 minutes. Add corn and beans and cook 3 to 4 minutes. Add tomatoes and onion and cook an additional five minutes. Add Creole seasoning and beer; simmer lightly for 15 to 20 minutes. Add herbs, red pepper sauce and worcestershire, and cook for another 5 minutes. Serve hot. Makes 4 to 6 servings. Calories 212, Fat 4 g. Carbs 36 g, Sodium 64 mg, Fiber 7 g. Points 4.
