Apple and Vinegar Red Cabbage 1 oz. butter 1 onion, finely chopped 1 clove garlic, crushed 1 lb. red cabbage, trimmed and shredded 1 cooking apple, peeled and cored salt and pepper 6 tablespoons red wine vinegar 2 ozs. soft brown sugar Melt the butter in a large pan on boiling plate and fry the onion and garlic for 1 to 2 minutes. Add the cabbage, apples and seasoning and cook for 5 minutes, stirring with a wooden spoon. Mix the red wine vinegar and brown sugar and pour over the cabbage.
