At my other job this was a favorite one of the women in the office used to bring

in.

I got the recipe from her before she left. I'll send it to the spice group

because when you cook the onions you can add some ghopped hot peppers, it's good

that way also.

 

 

Onion Crisp Casserole

 

5 large brown onions or Vidalia, peel and slice into rings

1 stick of butter ir margarine ( don't use the whole stick, about 3/4 of it

Parmesan cheese

Crisp buttery crackers like Hi Ho or Keebler, crushed

optional-chopped hot pepper

 

Saute the onions (and hot pepper if using) in butter until they are soft.

Pour 1/2 the onions into 1 1/2 quart casserole, cover with parmesan cheese and

then 1/2 the crackers. Repeat the layers and bake uncovered in 325 F. oven

until golder brown, about 30 minutes.
