Guest guest Posted April 18, 2006 Report Share Posted April 18, 2006 Tomato Eggplant-Stuffed Crepes These are nice and easy to make, use any tomato sauce you like I like mushrooms in mine, you can serve these with pasta or rice or just a salad. Enjoy! AJ 4 tbsps. onion, chopped 4 cups eggplant, diced, cooked 4 cups. tomatoes, fresh, chopped 1 cup vegetable broth 4 tbsps. mild curry powder 1 tsp. cinnamon 2 tsps. salt 8 garlic cloves, chopped 24 crepes Saute all the ingredients, except the crepes, in a large skillet over medium heat for 10 minutes.
