I add onions to the lentil as they cook, also a touch of liquid smoke and some BBQ sauce to the ketchup. My friend at work makes this poaf with green chilie salsa instead of ketchup You won't be disappointed in this loaf. You can make is real spicy too. Makes a great sandwich the next day! " Lentil Loaf " 1 c lentils 3 c veg broth 2 c oats (quick or old fashioned both work) 1 c ketchup 2 heaping tbsp mayonnaise (vegan version) 1 tbsp worchestershire sauce (vegan version) 2 tbsp soy sauce 1 tbsp minced garlic 1/2 cup sliced almonds Bring the broth to a boil and add lentils. Simmer 20 minutes. Turn off heat and stir in oats, 3/4 cup ketchup, mayonaise, worchestershire sauce, soy sauce, garlic, almonds, and 1/2 cup water might need a touch more water. Stir well and place in a greased loaf pan 9X5 . Top with remaining ketchup and bake at 350 degrees for 30 minutes. Serve with mashed potatoes, mushroom gravy, and a green vegetable.
