Guest guest Posted April 15, 2006 Report Share Posted April 15, 2006 Believe it or not, this will be Easter dinner (at my daughter's request). Kind of an odd choice, but something we both like. Olive Oil About a pound and a half of stringbeans About 4 lbs. Yukon Gold potatoes peeled and cut into uniform bite size chunks Large Onion chopped Four cloves garlic chopped or put through a press Italian seasoning One large can Progresso whole tomatoes plus one jar DelMonte diced tomatoes (the new ones in the jar...nice!) Salt Pepper Saute onion and garlic in olive oil. Add whole, trimmed stringbeans and saute briefly. Add potatoes and tomatoes and simmer (covered) until all veggies are tender. Season to taste.
