Spaghetti with Nuts

You can use any nuts you like these two have different flavors but add such a

nice flavor to the dish.

 

Spaghetti with Nuts

 

3 tbsps. vegetable oil

1 lb.mushrooms sliced

2 cloves garlic, crushed

grated rind of 1 orange and juice of 2 oranges

2 oz. shelled pistachios, finely chopped

2 ozs. shelled hazelnuts, finely chopped

3 tbsps. fresh parsley, chopped

salt and pepper

1 lb. fresh spaghetti or other thin noodles

 

Heat oil and cook mushrooms and garlic over a medium heat in a covered pan for

3 minutes, stirring.

Add orange rind and juice, nuts, parsley and seasoning.

Cover and cook gently for 5 minutes.

Meanwhile, cook spaghetti for about 3 minutes, or until tender.

Drain well, then add to mushroom mixture and gently mix together.

Serve immediately. Serves 4.

Jean do you know I love nuts in pasta? I will try this for sure. I moved it to

the top of my pile of " must makes "

there's a recipe in our files for a pasta with nuts in the sauce. I'll find

it for you. You've got to try it, it's delish!
