Peanut Butter, Banana, Chocolate Chip Bread 2 ripe bananas, mashed 2 1/2 cups flour 1/2 cup white sugar 1/2 cup brown sugar 1 cup soy milk 1/3 cup applesauce 1 tablespoon baking powder 3/4 cup peanut butter 1 teaspoon vanilla 1/4 teaspoon ground cinnamon 3 tablespoons cooking oil 1 cup chocolate chips non dairy Preheat oven to 350 degrees. Stir together flour, sugars, baking powder and cinnamon. In another bowl combine bananas, soy milk, peanut butter, oil, vanilla and applesauce. Add to flour, stir until combined. Stir in chocolate chips. Pour into two greased 8 x 4 x 2 loaf pans. Bake 50 to 55 minutes or until toothpick comes out clean. Frost with Peanut Butter Frosting: Melt 3 tablespoons peanut butter with 2 tablespoons margarine in a saucepan. Stir in one cup powdered sugar and 1 teaspoon vanilla.
