If it's a fresh one, eat it plain!! YUM! To prepare: 1 - Pull off the outside layer of leaves. 2 - Snip the points off the remaining leaves 3 - Open the artichoke at the top and spread the leave apart some - scrape out the hairy part inside, with a sharp-edged spoon. Trust me, it's much easier to do this efore you cook. 4 - Steam for 40 minutes, or about 15 if you have a pressure cooker. This obviously varies with how big or small it is. 5 - Meanwhile - melt some butter. Add lemon juice and minced garlic. When the artichoke is done cooking - pull off a leaf, and dip the " attachment " end in the butter. Scrape the flesh off with your teeth and repeat.
