Guest guest Posted April 14, 2006 Report Share Posted April 14, 2006 Baked Bean Creole 1 large onion, chopped, 1 garlic clove, crushed, oil for frying, 2 green bell peppers, diced, 3 celery stalks, sliced, 2 tbsps. flour, 1 can tomatoes, 1 can tomato paste, dash basil, dash rosemary, 2 cups cooked beans of your choice, 1/2 cup breadcrumbs, water Saute onions and garlic lightly in oil. Add pepper and celery. Fry for several minutes til ltender. Stir in the flour and add tomatoes. Add tomato paste, herbs and beans. Mix in breadcrumbs. Add a little water if too dry. Spoon into oiled casserole, sprinkle breadcrumbs on top. Bake for 30 minutes at 350 degrees. Serve with rice & salsa sauce. Serves 4.
