Guest guest Posted April 13, 2006 Report Share Posted April 13, 2006 Lentil and Spinach Soup I makes soups a least 1 a week in the winter, here is on of them . 1 1/2 cs. dried lentils 8 cs. water 1 large onion, chopped 3 garlic cloves, crushed 6 ozs. tomato paste 2 bunches spinach, cleaned and chopped 1/2 c. fresh parsley 1/4 tsp. freshly ground pepper 1/8 tsp. crushed red hot pepper flake 1/4 c. fresh lemon juice Serve with pita bread and a grain or vegetable dish for a simple meal Place the lentils and water in a large pot Bring to a boil, cover, and cook for 30 minutes over medium low heat Add the onion , tomato paste and garlic and cook an additional 30 minutes Add the spinach, parsley, and peppers Mix well and cook for another 10 minutes Add the lemon juice just before serving Mix in well and serve at once Add a bit of fresh ground nutmeg and salt to taste.
