Guest guest Posted April 12, 2006 Report Share Posted April 12, 2006 Ensalada de Chayotes (Chayote Salad) 3 chayotes, peel, remove seed and cut into small cubes 2 garlic cloves, minced 1 small red onion, cut into circles 1/3 cup olive oil 1 tablespoon of chopped up cilantro little bit of dry oregano salt and pepper (some crushed re pepper if you like) Cook the chayote in boiling water until tender for 15 minutes. Drain it and cool. Mix all the other ingredients in a bowl and let sit for half hour. Add the chayote, mix and eat or put in the refrigerator to get cold first.
