Saute carrot and onion 3-4 minutes or until onion begins to turn gold. Stir in rice and saute another 3-4 minutes or until rice turns gold. Stir in stock.Increase heat to high and bring to boil.Immediately reduce heat to low.Cover saucepan and simmer 20 minutes or until rice is tender and liquid is absorbed. Stir spinach into rice mixture and cook until heated throughout. ChupaNote: I added toasted almonds at the end. Also spiced it with red pepper flakes and cinnamon. Turmeric with cardamon works fine too. Its a forgiving recipe. Fool around with it. Source: Unknown (the Aunties?) Formatted by Chupa Babi in MC: 2005 ----- Source unknown.
