Multi Bean Vegetable Soup

 

1 Gallon water

2 cups multi bean mix

3 onions chopped

12 cloves garlic, minced

5 carrots, peeled and grated

1/2 bunch celery sliced

4 bay leaves

3 rounded Tbsp. Italian herb mix

1 tsp. black pepper

1 1/2 cups corn kernels

Soy sauce or Bragg's aminos to taste

1/2 cup olive oil or ghee ( or leave this out and serve with garlic cilantro

oil)

Serve with cilantro leaves on top.

Either soak beans overnight and then use in recipe or pressure cook beansuntil

don and add to soup while cooking. Mix all veggies in water .except garlic and

corn. Add beans when beans are cooked. Add herbs and spices. Add oil, garlic,

and corn 5 minutes before serving.
