Guest guest Posted April 10, 2006 Report Share Posted April 10, 2006 Tomato and Cheese Pizza 1 16 oz. loaf frozen bread dough, thawed 2 cups green and/or red sweet bell peppers, chopped 1 cup (4 oz.) shredded mozzarella cheese 3/4 cup (3 oz.) shredded fontina cheese 1/2 cup (2 oz.) grated Parmesan cheese 1/2 cup (2 oz.) crumbled feta cheese 2 TB chopped fresh parsley 1 TB chopped fresh basil or 1 tsp. dried 3 medium plum tomatoes or small regular tomatoes, thinly sliced 1 TB extra virgin olive oil 2 cloves garlic, minced On a lightly floured surface, roll bread dough into a 14 " circle. Transfer dough to a greased 13 " pizza pan. Build up edges slightly. Prick generously with a fork. Bake in a preheated 375º F., oven for 20 to 25 minutes or until light brown. Sprinkle chopped sweet peppers over hot crust. Top with mozzarella cheese, fontina cheese, Parmesan cheese, and feta cheese. Sprinkle parsley and basil over cheeses. Arrange tomato slices on top. In a small mixing bowl combine olive oil and garlic. Brush tomato slices with oil mixture. Return to oven and bake 15 to 20 minutes more or until cheeses melt and pizza is heated through.
