Guest guest Posted April 9, 2006 Report Share Posted April 9, 2006 Vegan -- Coconut Rice Basmati rice is simmered in coconut milk, instead of water, giving it a rich flavor. 2-1/2 cups Basmati rice 4 cans (10 oz. ea.) coconut milk 1 pinch salt In a large sauce pan over high heat, combine rice, coconut milk and salt; bring to a boil. Guest guest Posted April 9, 2006 Report Share Posted April 9, 2006 This is a breakfast food in Sri Lanka and they eat it with lentil curry or a spicy mix of red onions and chilis ground together to a paste (that'll wake you up!) or sometimes a paste of fresh scraped coconut and honey. They spread the coconut rice on a platter and let it set up a bit then cut it into pretty diamond shapes.
