Tofu Italiano Casserole 1 lb. tub firm tofu, drained 1 tablespoon olive oil 1 small onion, chopped 2 or 3 garlic cloves, minced 1 tablespoon dried parsley 2 teaspoons dried oregano 1 teaspoon dried basil 1/2 lb. pasta , ziti, spirals, bows or penne (I use 3/4 lb) pasta sauce (use your favorite) 1 cup cheddar or mozzarella cheese, grated Preheat oven 350 degrees Boil pasta until al dente, and drain, set aside. Mash the tofu but leave small lumps. Sort of crumble it up. Heat oil in skillet and add onions, and garlic and cook strring for a few minutes, until onion is tender. Add tofu and spices. Cook until everything is heated and starts to bubble. Add one cup of spaghetti sauce and bring to a slow boil, turn heat on low and simmer for 5 minutes. In a 2 quart baking dish layer half the noodles, 1 1/2 cups spaghetti sauce, half the tofu mixture and half the cheese. Repeat layers. Cover and bake for 30 minutes. Uncover and bake another few minutes so casserole crisps on the edges. This serves about 8 people. ~Tip~ I like to add a little parmesan cheese on top before I bake it.
