Guest guest Posted April 7, 2006 Report Share Posted April 7, 2006 Swiss Cheese Bread 1 cup all purpose flour 1/2 cup whole wheat flour 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 1-1/4 cups cottage cheese 5 TB butter or stick margarine, melted and cooled 1 large egg 1 TB Dijon mustard 1/2 cup shredded Swiss cheese Preheat oven to 350° F. Spray an 8 " loaf pan with vegetable cooking spray. In a medium bowl, combine flours, baking powder, baking soda, and salt. In a large bowl, whisk together cottage cheese, butter, egg, and mustard until well combined. Gradually add flour mixture and whisk until a lumpy batter forms. Whisk in cheese. Scrape batter into prepared pan and smooth top. Bake until top is golden and a toothpick inserted in center comes out clean, about 45 to 50 minutes. Place pan on a wire rack and cool slightly.
