Guest guest Posted April 6, 2006 Report Share Posted April 6, 2006 I use fresh strawberries or I thaw frozen strawberries I wash and freeze when I find them on sale. The folded egg whites make this a lovely textured bread. Strawberry Bread 1/2 cup vegetable shortening 1 cup sugar 1/2 tsp. vanilla 2 large eggs, separated 2 cups flour 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 1 cup strawberries, finely diced (don't puree them) Preheat over to 350 degrees and grease and flour a standard loaf pan. Cream shortening, sugar and vanilla until fluffy. Beat in egg yolks. In a separate bowl mix all dry ingredients together and add to the creamed mixture alternately with the strawberries, mix slowly until blended. In a small separate bowl beat the egg whites until they form stiff peaks. Gently fold the egg whites into the batter. Place batter into prepared loaf pan and bake for 50 minutes or until toothpick inserted comes out clean. Remove to write rack to cool. In 10 to 15 minutes remove from pan and continue cooling on rack. Don't be angry with life. There are so many things to be happy for. Cold, fresh water, green leaves and the eyes of good people.
