Guest guest Posted April 6, 2006 Report Share Posted April 6, 2006 This is a great mix to keep in the pantry so you can whip up a batch of yummy brownies in a snap. Better than Betty Crocker! After School Brownie Mix 6 cups flour 4 tsp baking pwdr 4 tsp salt 8 cups sugar 1 can (8oz) baking cocoa 2 cups shortening In a large bowl, combine first five ingredients. With a pastry blender, cut in shortening until evenly distributed. Store in a large air tight container in cupboard. Keeps 10-12 weeks. Yield: about 17 cups of mix. To make brownies: 2 1/2 cups brownie mix 2 eggs, beaten 1 tsp vanilla extract nuts optional In a mixing bowl, combine first three ingredients. Beat with a spoon until smooth. Fold in chopped nuts or chocolate chips if desired. Spread into a greased 8 inch square baking pan. Bake at 350 for 20-25 minutes or until top tests done.
