I wonder if I have any leftover bread ( that is not moldy) that is one of my 10 things in the fridge. I thought is was really yummy. PIZZA SOUP 1 1/4 cup sliced fresh mushrooms 1/2 cup finely chopped onion 1 teaspoon olive oil 1 cup water 1 (28-ounce) can fire roasted crushed tomatoes 12 vegan meatballs or 4 veggie burger patties chopped 1/2 cup chopped fresh tomatoes 2 veggie sausages sliced or 1/4 cup chopped vegan pepperoni 1 teaspoon Italian seasoning 1/4 cup vegan Parmesan cheese Shredded vegan Mozzarella cheese Directions: In a large saucepan, saute mushrooms and onion in oil for 2 - 3 minutes or until tender. Add water, tomato sauce, " meatbals " , tomatoes, veg. sausage, and Italian seasoning. Bring to a boil over medium heat. Reduce heat; cover and simmer for 20 minutes, stirring occasionally.
