Re; Stale Muffins

Thanks Robyn, Erin and Amy for the suggestions on making bread pudding. I would

do it but I only have 2 muffins left. I wonder if I have any leftover bread (

that is not moldy) that is one of my 10 things in the fridge.

Re: Pizza Soup

 

I made this Monday night when I was craving Pizza after my walk home by many

pizza shops! I thought is was really yummy.

 

PIZZA SOUP

 

1 1/4 cup sliced fresh mushrooms

1/2 cup finely chopped onion

1 teaspoon olive oil

1 cup water

1 (28-ounce) can fire roasted crushed tomatoes

12 vegan meatballs or 4 veggie burger patties chopped

1/2 cup chopped fresh tomatoes

2 veggie sausages sliced or 1/4 cup chopped vegan pepperoni

1 teaspoon Italian seasoning

1/4 cup vegan Parmesan cheese

Shredded vegan Mozzarella cheese

 

Directions:

 

In a large saucepan, saute mushrooms and onion in oil for 2 - 3 minutes or until

tender. Add water, tomato sauce, " meatbals " , tomatoes, veg. sausage, and Italian

seasoning. Bring to a boil over medium heat. Reduce heat; cover and simmer for

20 minutes, stirring occasionally. Before serving, stir in veg.Parmesan cheese.

Garnish with vegan Mozzarella cheese.

Two muffins would make just enough for two... I'll be there in a

jiffy! ;-)
