Guest guest Posted April 5, 2006 Report Share Posted April 5, 2006 Acorn Squash with Rice Raisin Nut Stuffing 1 C diced onion 1/2 C Walnut pieces 1/2 C raisins 1 tsp ground cinnamon 1/2 tsp ground ginger 1/4 tsp ground cloves 1 C brown or basmati rice 2 C water 1 Acorn Squash Bring water to boil in covered glass cooking pot on stove top. Add seasonings and rice; lower to simmer. Add all remaining ingredients and continue to simmer in covered pot until all the water is absorbed into rice. Remove from heat and mix thoroughly. Replace cover and let stand for 10 mins. Wash Acorn squash. Lay it on its side and cut in half along its length (top to bottom). Scoop out seeds (save for roasting if desired) Stuff the squash with prepared and cooked stuffing. Bake in covered roasting pan at 350 degress for about 1 hour or until squash is tender.
