Today I went with some guys from church and drove to areas of New Mexico I had not yet discovered. I saw some beautiful bluffs, a natural arch, stunning scenery. We had New Mexican food at a small restaurant in a tiny town, went the back way to Socorro, and on back home. We all enjoyed a vegetarian meal together for our Memorial Day adventure. And, yep, at home, I had a veggie burger and some potato salad for dinner. And some grapes for the heck of it. Yum! It was a marvelous day of great company, awakened wonder inside of me, and, indeed, eating. And the first place we stopped was the first Stuckey's I've been to in around 18 years! It was a very good day. Peace and all good, Andrew
Guest guest
Wow, Stuckey's. These are roadstops along the highways, at least in New Mexico. I'm not sure where else they are located. They always have snacks and drinks and all kinds of New Mexico " stuff, " like spoons and postcards and collector plates and T-shirts and terrible paperweights. I bought some postcards, a bottle of lemonade, and a Snicker's, as lunch was some time away. This Stuckey's sold gas too, and I don't know if that's common or not. Anyway, they did offer bean/guacamole tostadas, but as usual, I went right for the chile rellenos. The tostadas will take precendence if I ever become vegan!
