I don't bother using the fresh cactus leaves, hard to handle and too much work. " Cactus Salad " (this dish always impresses people and they want the recipe) 1 30 oz. jar nopalitos (cactus, it will be chopped if not rinse & chop) 2 large tomatoes chopped 1 sm. onion chopped 3 tblsp. fresh chopped cilantro 3 tblsp. olive oil 4 tsp. white vinegar or seasoned vinegar Pinch of red pepper flakes Place cactus, tomatoes, onion and cilantro in glass or plastic bowl. Shake vinegar, olive oil and red pepper flakes in a tightly covered jar. Pour over vegetables and toss. " Life is what happens to you, when you're busy making other plans.
