A couple carrot salads..and a thought

don't forget carrot cake, too...if it cools down enough to bake!

 

Here are a couple salad recipes for carrots I've had luck with. I

have more if you'd like...these are always a hit though.

 

 

Moroccan Carrot Salad - from Linda McCartney

 

1/2 cup currants - soak in warm water (or oj) for about 10 minutes

(you can use raisins & if they are soft you don't need to soak them)

4 seedless oranges, peeled and sliced thin

3 cups carrots, grated

1 medium onion, finely chopped

3 Tbs walnuts, finely chopped

1/4 tsp red pepper flakes or paprika or cayenne

3Tbs olive oil

juice of 1 lemon

salt and pepper to taste

 

Mix everything except currants/raisins in a large bowl and toss

gently. Drain currants & add them to salad. Stir well & chill for at

least 30 minutes before serving.

 

 

Apple-Carrot-Pineapple Salad - from Vegetarian Times

this is for two, but double it as often as you need for more

 

1 apple shredded

1 carrot finely grated

1/2 cup pineapple chunks

2 TBS plain yogurt

dash of cinnamon

 

Mix it up, chill and enjoy!
