Guest guest
> Curry is actually a mixture of other spices. I can't remember them > all off the top of my head...I'll have to ask my husband. I know > there's cumin and garlic, tumeric, I think I'm forgetting > something... Yep; they vary wildly. Here is one from " The Indian Vegetarian " by Neelam Batra, that I use sometimes. 1/2 c coriander seeds 1/4 c cumin seeds 2 tbsp fenugreek seeds 1 tbsp black peppercorns 1 tbsp fennel seeds 1 tbsp black mustard seeds 1 tbsp white poppyseeds 15 to 20 green cardamom pods seeds from 7 to 10 black cardamom pods 2 tbsp turmeric 1 tbsp ground ginger 2 tsp ground nutmeg Put the first 9 ingredients in a bowl, and grind in batches in a cofe or spice grinder. Mix well with the turmeric, ginger and nutmeg. Store in an airtight container ina cool, dark place. This stays fresh for 6 to 8 months in the refrigerator. Keep some in teh kitchen and refrigerate the rest. You can also add cayenne or other spicy pepper.
