Guest guest Posted May 15, 2005 Report Share Posted May 15, 2005 Now here is another recipe i found in my personal recipe card file box when i was looking for the hand-written copy of my rhubarb snack cake. i think i found it in one of those church cookbook collections my grandmother used to have. It is a delicious way to use a crop of rhubarb.... i am glad i rediscovered this one! Almond Rhubarb Coffee Cake 1 1/2 cups packed brown sugar 2/3 cup vegetable oil 1 egg 1 tsp. vanilla 2 1/2 cups flour 1 tsp. salt 1 tsp. baking powder 1 cup milk 1 1/2 cups chopped rhubarb 1/2 cup sliced almonds TOPPING: 1/3 cup sugar 1 Tbs. butter, melted 1/4 cup sliced almonds In a mixing bowl, beat brown sugar, oil, egg and vanilla until smooth. Combine flour, salt and baking soda; add to sugar mixture alternating with the milk. Beat until smooth. Stir in the rhubarb and the almonds. Pour into two greased 9 inch round cake pans. For topping, combine the sugar and butter; stir in almonds. Sprinkle over batter of both cakes. Bake at 350û for 30 to 35 minutes or until a toothpick comes out clean.
