" Rhubarb Tea Bread " 1 cup whole wheat flour 1 cup all purpose flour 3/4 cup sugar 1-1/2 tsp. baking soda 1-1/2 tsp. baking powder 1 tsp. salt 1 Tblspn. grated orange rind 3/4 cup orange juice 1 lg. egg slightly beaten 2 Tblspn. canola oil 1-1/2 cups chopped rhubarb 1/2 cup chopped walnuts Preheat over to 350 degrees and grease an 8 X 4 inch loaf pan (I always line the bottom with waxed paper also) Sift the dry ingredients in a bowl and set aside. Combine sugar, oil, egg and orange juice and mix until well blended. Stir in orange rind, and mix in dry ingredients just until moist, batter will be a little lumpy. Add rhubarb and walnuts and stir lightly until mixed. Place batter in prepared pan and bake 55-60 minutes, until toothpick inserted in center comes out clean. Let cook on wire rack about 10 minutes before removing from pan. Remove from pan and continue cooling on rack. Enjoy!
