Recipe: Couscous Cakes

Heres a really quick dessert. Best of all, you can alter the flavour

to virtually anything you want.

 

Ingredients

1 egg

1 egg yolk

150g/5¼oz couscous, cooked according to packet instructions

2 oranges, zest only

1 vanilla pod, seeds removed

4 tbsp self-raising flour

drizzle oil

drizzle of honey

spoonful of Greek-style yoghurt, to serve

 

 

 

Method

1. Mix the egg, yolk, couscous, orange zest, vanilla seeds and flour

in a large bowl until combined.

2. Heat the oil in a non-stick frying pan and spoon the mixture into

the pan to make four cakes. Fry for 2-3 minutes on each side, or

until golden.

3. Transfer to a serving plate and drizzle with honey. Top with a

spoonful of yoghurt to serve.

 

Try substituting the orange zest with lemon or lime. Take out the

zest completely and add a little nutmeg or cinnammon. drizzle your

favourite sauce (chocolate is great) or serve with ice-cream. It's

all good!!!
