I also one time was making plantain tarts for a wine tasting party (I was catering it for a friend), and I used my small silicone pans, and also my metal pans so I'd have enough.... the metal ones browned better, and the some of the silicone ones were puffier - if you looked at the bottom of it, it was slightly domed, not flat.
