Guest guest Posted May 3, 2005 Report Share Posted May 3, 2005 These are a few Cinco de Mayo recipes I use each year " Kokopelli Salsa " 4 large tomatoes diced 1/2 medium onion chopped 2 jalapeno peppers finely diced 3 tbspns chopped fresh cilantro 1 clove garlic minced 1 or 2 tblspns lime juice but lemon works too 3/4 tsp salt 1/2 tsp cumin 1/4 tsp black pepper * optional chopped black olives and sometimes I add a litle corn Combine all ingredients and chill before serving. " Black Bean Burgers " 2 (15 oz) cans of black beans, rinsed and drained 1 small onion finely chopped 2/3 cup breadcrumbs 1 clove garlic minced 1 tbslp fresh cilantro or basil (your choice) finely chopped 1 tsp. ground cumin 2 eggs (I use 2 egg whites) beaten 1 sm. jalapeno pepper minced (optional) salt and pepper Place beans in bowl and mash with a fork. Add remaining ingredients and mix well. Shape into 6 patties and fry in a little oil on medium heat a few minutes on each side. " Green Chili Rellenos " (stuffed green chilis) 10 ortega canned chilis 10 ounces jack cheese Batter: 1 cup flour 1 tsp baking powder 1/2 tsp salt 3/4 cup cornmeal 1 cup milk 2 eggs slightly beaten Mix batter by mixing the dry ingredients in a shallow wide bowl and then blend in the milk and egg, mix well and set aside. Cut cheese into 1/2 thick slices then length of the chilis. Make a small slit in the chilis just big enough to insert cheese. Dip chilis in batter and fry in hot oil until golden brown, turning one time. * it's easy to dip the chilis in batter my placing them in a large serving spoon and laying them in batter and doing the same when placing them in the skillet. Garnish with salsa & cilantro " Jicama Chili Sticks " 2 medium or small jicamas 2 limes 1 tsp. chili powder (more if you like) Peel jicama and cut into slices. Arrange on paper towels and sprinkle with lime juice and dust with chili powder. Transfer to serving bowl and chill before serving. " The afternoon knows what the morning never suspected.
