I'm pinched for time many a day so it's nice to find a good quick recipe that's made from scratch...............Enjoy, Donna " South Western Cilantro Pesto " 1 cup firmly packed fresh cilantro leaves 1/2 cup almonds 3 large garlic cloves peeled 1/4 cup grated parmesan (or soy parmesan made with yeast flakes) 1/4 cup olive oil 1/2 tsp. salt Combine the cilantro, almonds and garlic in food processor or blender and puree until smooth. Add the parmesan, oil and salt, puree to a smooth paste. Toss with hot noodles or place pesto in bowl and use as spead for Italian or French bread.
