I realized hey, I should post them here too! They're all recipes I've tried and liked. :-) So, I'll post them... separately might be easiest? Otherwise the message will get very long... Vegan Recipe #1 Quinoa and Corn Pilaf 1 c quinoa, rinsed 1 1/2 tbsp light olive oil 1 large onion, quartered and thinly sliced 2 c cooked fresh corn kernels or one 8-oz package thawed frozen corn kernels 1 tsp cumin salt & freshly ground pepper to taste 1. Bring 2 cups water to a simmer in a medium saucepan. Stir in the quinoa, cover, and simmer gently until the water the absorbed, about 15 minutes. 2. Meanwhile, heat the oil in a wide skillet. Add the onion and saute over medium heat until golden. Stir in the corn kernels and continue to saute until the onion begins to brown lightly. 3. Stir the cooked quinoa into the corn mixture along with the cumin, and season with salt and pepper. If a little more moisture is needed, stir in a small amount of water, and serve.
