" Italian Eggplant Subs " 1 large eggplant (peeled and sliced 1/4 inch thick) I leave my peeling on. 1 cup breadcrumbs (seasoned or plain) 2 eggs, beaten 4 large rolls or sub buns 1 jar roasted red peppers or roast your own and slice 1 small can slices olives 8 slices of mozzarella cheese or provolone cheese 2 tomatoes sliced 1 sm. bottle Italian dressing Lettuce Preheat oven to 350 degrees In a shallow bowl beat the eggs. In another bowl place the breadcrumbs. Dip eggplant slices in egg and then breadcrumbs. Place on a greased baking sheet and bake for 30 minutes turning once after 15 minutes, or until crispy. Cool for a few minutes. On bottom of bread layer with lettuce, eggplant, red peppers, cheese, tomatoes and olives. Sprinkle with salad dressing and top with the top of bun.
