Guest guest Posted April 27, 2005 Report Share Posted April 27, 2005 Amy I never stuffed shells with spaghetti squash but I will try it soon, maybe make lasagna roll ups with it Here's a nice spring or summer recipe...........Thanks, Donna " Springtime Spaghetti Squash " 1 spaghetti squash cooked, and strands removed to a bowl 3 tablspns olive oil 1/2 tsp. ground cardamom 3/4 tsp. ground coriander 2 chopped green onions 1/8 tsp ground ginger salt & pepper to taste 1/2 cup toasted slivered almonds 1 tsp. orange juice zest of one orange In large skillet and olive oil, over medium heat stir in the spices and onions, except salt & pepper. Stir for a minute so flavors blend. Stir in spaghetti squash, onions, orange juice until well coated. Add salt & pepper to taste. Place in serving dish and sprinkle top with almonds and orange zest. I'll have to try it one of these days... but I'm about cooked out for a few days! Had a group of 11 over to my house for a sit-down dinner last night... everything from scratch... I love cooking and all, but now I'm tired! :-) But at least they all liked it (only one other vegetarian) - and even said they didn't miss the meat!
