Amy I never stuffed shells with spaghetti squash but I will try it soon, maybe

make lasagna roll ups with it Here's a nice spring or summer

recipe...........Thanks, Donna

 

" Springtime Spaghetti Squash "

 

1 spaghetti squash cooked, and strands removed to a bowl

3 tablspns olive oil

1/2 tsp. ground cardamom

3/4 tsp. ground coriander

2 chopped green onions

1/8 tsp ground ginger

salt & pepper to taste

1/2 cup toasted slivered almonds

1 tsp. orange juice

zest of one orange

 

 

In large skillet and olive oil, over medium heat stir in the spices and onions,

except salt & pepper.

Stir for a minute so flavors blend.

Stir in spaghetti squash, onions, orange juice until well coated. Add salt &

pepper to taste.

Place in serving dish and sprinkle top with almonds and orange zest.

I toss cooked spaghetti squash with basil, stuff it into cooked

jumboshells and top with tomato sauce. Add cheese if you like and

bake until heated through and the cheese is bubbly and beginning to brown.

That does look good, DOnna! I'll have to try it one of these days...

but I'm about cooked out for a few days! Had a group of 11 over to my

house for a sit-down dinner last night... everything from scratch... I

love cooking and all, but now I'm tired! :-) But at least they all

liked it (only one other vegetarian) - and even said they didn't miss

the meat! They didn't know vegetarian cooking could be like that...

maybe they'll eat a few more veg meals. :-)
