The best rice for sushi Cal Rose or a short grain white rice. The Asian short grain rice is a sticky rice, basmati rice separates. Take 1/4 cup rice vinegar and 1 1/2 tablespoons sugar and a dash of salt and boil it until the sugar is dissolved. Cook about 1 1/2 cups rice (about 3 cups done) and when it's done fold the vinegar mixture gently in the rice as you fan the rice. Keep folding slowly and fanning for a few minutes. Cover it with a towel and let cool down until you are ready to prepare your sushi..Hope this helped you. Donna Jen Lott <celestial726 wrote: I do have rice vinegar.
